Southern Fare With Care- Mashed Turnips with Quinoa and Greens

The First in a new and continuing series of Southern Fare-- done my way-- healthy and vegetarian or vegan! I was raised by a full-blooded Italian mother from Brooklyn and a father born and bred in the South.  Combine that with everything I know about health, nutrition, and good old fashioned cooking and you've got a recipe for food made with love, passion, and Southern Hospitality!
